Italian Meatballs
Lindner Family Recipe: Helen -> Richard -> Michael
Ingredients
1 lb. ground beef
1 onion, diced
1 bell pepper, diced
2-3 eggs
1/2 cup cracker meal + parmesan OR panko, finely crushed
2 cans hunt’s pasta sauce
salt and pepper
dried oregano
Directions
Set aside a small handful of diced onion.
Heat sauce in a large pot on low, adding the rest of the onion, diced bell pepper, and oregano (to taste).
Add ground beef, eggs, cracker meal/Parmesan, the handful of onion, and salt and pepper (to taste) to a large mixing bowl. Mix by hand.
Form into balls. Usually makes about 9 meatballs.
Place into sauce and simmer for at least 1 hour. Ready to serve.
